This past year one of the highlights at the Meadows of Napa Valley was the series of “successful aging” presentations given by PRS Regional Director Pat Akery. Not only were the presentations themselves enjoyable and informative, but the people who attended had the chance to enjoy some of the wonderful food prepared by the Meadows’ Dining Team. In fact, they got a chance to savor the delightful results of the Meadows’ Dining Services Team pairing up with the Dining Services Team from its sister community, Saratoga Retirement Community. The Meadows’ Executive Administrator, Wayne Panchesson, says, “The two Dining Services Teams collaborated on the meal, and they really got to demonstrate their talent at serving food that is delicious, healthy, and beautiful to look at. The meal these two Dining Services Teams prepared was just bursting with color. The main dish was a salad of herb-marinated grilled chicken breast with grilled polenta, shaved Manchego cheese, mesclun mix, oil-cured olives, red and gold cherry tomatoes, and asparagus. For dessert they served spring-colored gelatos and sorbets with fresh mint. It was truly fabulous.” The Meadows’ Dining Services Team, Executive Chef Robert Day, and Director of Dining Services Mark Dagostino say that they greatly enjoy preparing these types of health-focused meals. Mark says, “We’re thrilled that the Meadows is so committed to serving residents this way. It’s much more exciting for us to cook like this, creating meals that please the palate and add to residents’ overall well-being.” Another highlight has been preparing the campus for the transformation that will soon get under way. This includes updating the campus’s look with new paint, carpeting, furniture, windows, window treatments, lighting, and more. But the biggest highlight has been getting the green light to move into the development phase of the expansion and the renovation of the entire campus. Right now PRS and RSLLC are working with the architects on the design for the new and improved campus. The plans include redesigning the existing Atrium and combining many of the smaller one-bedroom Residential Living apartments into larger two-bedroom living spaces in keeping with what today’s seniors are looking for. In addition, the existing Assisted Living apartments will be converted to Residential Living, allowing more residents to enjoy the Meadows’ independent lifestyle. The expansion will add a brand-new Assisted Living building that will also house a new Memory Care Center. Expansion plans also call for a brand-new central kitchen that will serve the entire campus. The development phase, which is currently under way, will shift into the first phase of construction in early 2008. The Meadows is managed by Retirement Services, LLC, an affiliate of Pacific Retirement Services. It is owned by the Independent Order of Odd Fellows and Rebekahs. Back to PRS Annual Report Index
